Cave Le Grillon - Fully

About the winery

On their small, third-generation family estate, Jean-Michel Dorsaz and his family focus on quality and innovation, always in keeping with tradition.

Most of their vines grow on terraces. Although you need a will of steel to plant vines on these slopes, sometimes on a 70% incline, nothing can compare to the quality of these hillside vineyards, whose optimal exposure favours the effects of the sun’s rays and the plump ripening of the grapes. Managing vineyards on steep slopes makes transporting grapes, equipment and people particularly complicated. This means that no mechanisation worthy of the name is possible, and everything is done by hand.

Their vineyard, comprising a selection of plots located entirely in Fully, Les Seilles and Grillon, still benefits from their grandfather’s innovative spirit. The diversification of varieties that Jean-Michel quickly initiated mean that speciality wines occupy half of the plots. They were amongst the first to plant Chardonnay vines in Fully.
