Cave du Paradou - Nax
About the winery
Created in 1994, the Paradou cellar operates an area of around 5 hectares. The vines are mainly located in the municipality of Mont Noble at the entrance to Val d'Hérens. The sheltered slopes, exposed from south to south-west, allow the vines to grow at an altitude of up to almost 1,000m. The location is strangely reminiscent of that of the mythical vineyard of Visperterminen in Upper Valais.
The production of a few plots located in the Rhone Valley completes the range, with late-ripening grape varieties such as Cornalin, Petite Arvine, Marsanne, Humagne Rouge and Syrah. Twenty-eight grape varieties are cultivated separately and offer a wide assortment, from dry and aromatic white wines to dessert wines from late harvests, right through to red wines - some of which are matured in Bordeaux barrels.
A great wine is first created in the vineyard. For this reason, particular care is taken in the production of high quality grapes: adaptation of the different grape varieties to the terroirs that are best suited to them, strict control over yield, indispensable in creating concentrated wines with typical varietal features, and the method of cultivation to respect the environment (integrated production).
