Cave Mandolé - Saillon

About the winery

Cave Mandolé is the dream project of Lisa and Chiara, who met in 2015 while they were still students. After six years of exploration and traveling the world to discover the great wine regions, their dream led them in 2021 to Valais, a region of striking contrasts and captivating beauty. Fascinated by its rich mosaic of indigenous grape varieties and its exceptionally complex terroir, they took over Cave Mandolé, working closely with its founders.

Valais, with its steep and spectacular slopes, requires meticulous work, while its unpredictable climate demands great adaptability.

Their mission is clear: to enrich the 8 hectares of vineyards by promoting biodiversity through progressive and sustainable evolutions in viticultural practices. And in the glass? Pure wines, full of freshness and rich in stories to share.

Special attention is given to indigenous grape varieties, true witnesses of the terroir.

Beyond wine production, they envision the Cave as a space open to sharing, where tradition and creativity come together to foster simple and genuine connections around collective projects.
