Cave d'Anchettes - Simon Favre & Fils - Venthône
About the winery
"When you work only at the vine, you neglect the cellar. You nurture a wine as you would a child, with love and passion." Simon Favre (1948-2012)
Since 1982, the winery has carved out a reputation as an innovator in the Valais winegrowing scene, pioneering the introduction of new grape varieties such as Viognier and Pinotage. The estate currently cultivates around 30 grape varieties on 42 plots in the municipalities of Sierre, Noble Contrée and Crans-Montana. They are spread over 13 hectares and collectively produce more than 35 different vintages with a minimum maturation period of one year.
The wide range of grape varieties means that the harvest can be staggered based on how early a variety ripens. The grapes are transported to the winery as soon as they reach full maturity. The white grapes are pressed immediately using the Champagne method, without pressing or destemming, while the red grapes are destemmed and pressed. The wine has been made according to the traditional method since 1972, with indigenous yeasts used to preserve the inherent authenticity of each variety.
